01.24.2012 - Mini Egg Omelet Muffins

I noticed a few entries on Pinterest that were little omelet muffins, so I decided to make my own version. Unfortunately my muffin pan is old and kinda crusty looking - even though it's clean, so I had to use paper lines. They turned out awesome, but I will buy a designated muffin tin just for these so I don't have to use liners next time.

Here's the recipe:

MINI EGG OMELET MUFFINS

Minutes to Prepare: 15  |  Minutes to Cook: 30

INGREDIENTS:

3/4 C green onions

3/4 C diced ham

3/4 C diced cherry tomatoes

3/4 C shredded cheddar

1/4 C nonfat milk

12 large eggs

DIRECTIONS:

Preheat oven to 375 degree F. 

Dice tomatoes and slice onions. In a bowl, mix both with the diced ham. In a separate bowl, whisk eggs, milk and your choice of seasoning. I use dill, salt and pepper.

Spray a 12 muffin tin with oil or use liners. Place a spoonful of ham, onion & tomato mixture in each, distributing evenly. Add cheese to each, also divided evenly. Pour egg mixture up to the top of the muffin cup.

Bake for 30 minutes, remove from oven. Either cool the pan on a wire rack, or if you used liners, remove them from tin & cool on a wire rack.

Serving Size: Makes about 12 mini omelet muffins.

Number of Servings: 12

*I think these could probable be frozen, thawed and reheated in the microwave for 45 seconds or so.

01.23.2012 - Me & My Shadow

I was sick yesterday and today, but there was something at work I needed to do, so I went in for about 15 minutes. On my way back home, I noticed the shadow of the car on this row of bamboo, yes - in Alabama, and I thought it was kinda cool so I took a picture.

01.22.2012 - Crazy Bangs

When I was giving the kids a bath tonight, I started laughing at Maisie because her bangs were all swirly! I had Jeff bring me the camera. I'm not sure if she disapproved of the laughing or the camera, but that's why we were getting the "mean" face.

01.21.2012 - Nap

Here's my little man, taking a little nap! Jeff and the kids let me sleep in and ate poptarts. Later I prepared brunch, fried eggs, oven cooked bacon (yumm!) and biscuits. Alex must have been really tired, since he fell asleep in his high chair and it wasn't even noon yet!

01.20.2012 - Mean Face

There are times when my spunky little girl likes to give us the "mean" face. I think her daddy probably taught her this, although I'm not sure. But she has fun giving us her mean face even when she's not being mean!

01.19.2012 - Backyard View

Early this morning when I took Chance out into the backyard, there seemed to be big, black crows everywhere. They like to perch on the rooftops and call at one another. It makes all the smaller birds really mad.

01.18.2012 - Important Call

Miss Maisie loves talking on the phone! Whenever I'm on a call, she follows me around, reaching for the phone. If it's her Nana or her Auntie Lori, I will usually let her say hello. Of course, she usually tries to run away with it. When I ask her for it, she tells me "no!", but if I tell her to say goodbye, she will & will hand it back.

01.17.2012 - Where I Work

This is one of my views near work. I work at a residential treatment program for adolescents, and it's way out in the country. This property is next door to us, and as I was driving out the other day, the sun was going down and it looked so pretty! I had to jump out and take a picture. There are usually horses, but not today.

01.16.2012 - Tea Party

Maisie got a pretty new table and chairs for her birthday from her Nana and Grandad. They delivered them last night, and she and Alex wasted no time in having a tea party. Alex came out into the hallway and called "Arielle, come here" (he loves saying my name!) so I went and he told me to "have a seat, I made you tea." Maisie meanwhile was refusing to put on her pajamas... these kids are a riot!

01.15.2012 - Happy Birthday Maisie!

Maisie turned 2 on Saturday and we had her party today. I baked a pound cake and decorated it with Minnie Mouse, which Maisie pronounces "meh-na moosh".  After we sang 'Happy Birthday' she tried to blow out her candle twice, and the third time I helped. Alex was hovering because he couldn't wait to get a piece!

01.14.2012 - Sleeping Spot

When Jeff went to check on Alex the other night, he couldn't open his door! He pushed on it and then realized Alex had set up a little sleeping spot right on the other side of the door. I grabbed the camera and pushed the door open for a picture. I think it's kinda neat!

01.13.2012 - Crafty Journal

I crafted a journal, using an iron-on of an image from A Day For Daisies that I digitally paper pieced. I have lots of things I COULD write in a journal, but I haven't decided what I'll use this one for.

01.12.2012 - Dinner

With Jeff back at work nights, it would be so easy to pop something from the freezer into the oven for the kids' dinner. But we've made a lot of progress getting them to eat regular foods, so tonight's dinner was baked flounder, roasted potatoes and green beans!

01.11.2012 - Sleeping Beauty

My little sleeping beauty! She's turning two in 3 days! Most nights Maisie falls asleep on the couch clinging to her milk. She fights sleep until the last minute, and the next thing you know she's out...

01.10.2012 - "faux" Starbucks

I live in a small town without a Starbucks on ANY corner. I bought this cup and make my own iced coffee - 3 tsp instant coffee, sweet Italian Cream creamer & milk. I actually think it's better than Starbucks... and cheaper! I flipped the pic since it's "faux" Starbucks - LOL!

01.09.2012 - Chance

Chance is persnickety and often thinks he's a cat. Tonight he would not come when called and I finally found him burrowed down under a heaping pile of sheets and blankets in the corner of the laundry room. It took the promise of a 'treat' to get him to poke his head out...once I got the camera!

01.08.2012 - Underwear Ninja

The 4 of us were laying around in Alex's room after lunch and Alex pulled a pair of underwear (yes, clean) onto his head. Then he magically transformed into the "Underwear Ninja" and began karate chopping the air! He's such a crazy kid!

Every month I cozy up on the couch with a cup of coffee and play along with the Design House Digital Speed Scrap. It's one thing I look forward to every month, and I happily anticipate my personal little "date night" all day long!

01.06.2012 - Diaper Check

The kids love to climb all over Jeff when he's sitting on the couch. I grabbed the camera to take a pic. When he thought he smelled a dirty diaper ("pull~up" as both the kids usually correct me) he flipped Maisie over for a sniff. What a face! Then he told her to come tell me to change it, and she did... aren't I the lucky one?

01.05.2012 - A Field

There are huge fields across the street form my neighborhood.  I was driving by and decided to stop a few minutes. Some years the farmer plants peanuts, but mist of the time it's cotton. Right now it's very green, with rye grass I think. It wasn't harmed by the recent plunges in temperature. I love that there is so much open land here, but I think I do pay a price with all the allergies it gives me - LOL!

01.04.2012 - Bubble Bath

Today's excitement came in the form of a bubble bath! The kids love dumping water on each other and themselves, usually without much fighting - LOL! Maisie can't quite get the cup over her head before the water starts spilling out, but she really loves washing her hair and also Alex's if she can get to him!

01.03.2012 - Tchotchke

One of my co-workers popped into my office today with a little gift~y... a bowl from his trip to Abu Dahbi over Christmas! It's a little hand painted bowl about 3 inches in diameter. I've always been a sucker for such cute little tchotchkes! I love it!

01.02.2012 - Room Cleaning?!?

The kids managed to dump out a ton of toys in Alex's room, so I sent them to clean it up. A few minutes later I peeked in with the camera to find THEM in the toy bucket, instead of the toys! This is Alex's "caught" look as he quickly tried to scramble out.

01.01.2012 - New Year's Day

Every New Year's Day we go to my Meme's cabin for black-eyed peas and greens. Then we just hang out for the afternoon. Here's my mom and Meme starting a game of Candyland - Alex's first board game!
